Ingredients

  • 225 g unsalted butter , softened 1 cup
  • 150 g brown sugar ¾ cup
  • 100 g granulated sugar ½ cup
  • 2 large eggs
  • 2 tbsp vanilla extract
  • 280 g all-purpose flour 2 ¼ cups
  • 1 tbsp baking soda
  • ½ tbsp salt
  • 340 g semi-sweet chocolate chips 2 cups

Method

  1. Preheat Oven: Set oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream Butter & Sugar: In a large bowl, beat butter, brown sugar, and white sugar until light and fluffy.
  3. Add Eggs & Vanilla: Mix in eggs one at a time, then add vanilla extract.
  4. Combine Dry Ingredients: In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture.
  5. Add Chocolate Chips: Fold in the chocolate chips and nuts (if using).
  6. Scoop Dough: Drop tablespoon-sized scoops of dough onto prepared baking sheets, leaving space between each cookie.
  7. Bake: Bake for 10–12 minutes, until edges are golden and centers look slightly underdone.
  8. Cool & Serve: Let cookies rest on the tray for 5 minutes, then transfer to a wire rack. Enjoy warm or store for later.

Notes

 Use Room-Temperature Butter
Soft (not melted!) butter blends better with sugar, creating that fluffy texture and chewy center. Too cold, and your dough won’t mix well — too warm, and the cookies will spread too much.
 Don’t Overmix the Dough
Once you add the flour, mix only until combined. Overmixing develops gluten, making cookies tough instead of soft and chewy.
 Mix Up Your Chocolate
Use a mix of semi-sweet, milk, and dark chocolate chips or chunks for a rich, layered flavor. You can even chop up a chocolate bar for that bakery-style look.
Add a Pinch of Sea Salt on Top
Sprinkling a little flaky sea salt on top before baking enhances the sweetness and gives that gourmet sweet-salty balance.
 Slightly Underbake for Soft Centers
Take the cookies out when the edges are golden, but the centers still look soft. They’ll finish baking on the tray, giving you that perfect chewy middle.
