- Preheat the oven to 375°F (190°C) and lightly grease an oven-safe baking dish.
- In a skillet over medium heat, melt the butter. Add the chopped onion and cook until softened, about 3–4 minutes. Stir in the minced garlic and cook for 1 minute more.
- Sprinkle the flour over the onions and garlic and whisk to form a paste. Slowly pour in the chicken broth and then the cream, whisking constantly until smooth. Add thyme, paprika, salt, and pepper. Simmer for 3–4 minutes until slightly thickened.
- Pour the creamy sauce into the prepared baking dish. Stir in the shredded cooked chicken, if using. Evenly scatter the biscuit dough pieces over the top.
- Top with shredded cheddar and mozzarella cheese, spreading it evenly over the dumplings.
- Bake for 25–30 minutes, or until the dumplings are cooked through and the cheese is melted, bubbly, and golden on top. Garnish with chopped fresh parsley and serve warm.
Notes
For extra flavor, add a pinch of chili flakes or smoked paprika on top before baking. You can also swap the chicken for leftover turkey or keep it vegetarian by omitting the meat.
