Ingredients
  

Turkey & Cheese Roll-Ups
  • 4 flour tortillas medium, soft
  • 8 slices deli turkey thinly sliced
  • 4 slices cheese cheddar, Swiss or mozzarella
  • 2 tbsp cream cheese or mayonnaise for spreading
  • 1/2 cup shredded lettuce optional
  • 1/4 cup sliced cucumber or bell pepper optional, cut into thin strips
  • mustard or ranch dressing optional, to taste

  • Spreading knife or spatula

Method
 

  1. Lay one flour tortilla flat on a cutting board. Spread a thin, even layer of cream cheese or mayonnaise over the surface, going almost to the edges.
  2. Layer 2 slices of deli turkey over the tortilla, covering most of the surface. Place 1 slice of cheese on top of the turkey, keeping everything in an even layer.
  3. Add a small handful of shredded lettuce and a few strips of cucumber or bell pepper, if using. Keep the vegetables in a thin layer so the tortilla can roll up tightly.
  4. Drizzle a little mustard or ranch dressing over the filling, if desired. Avoid adding too much to prevent the roll-up from becoming soggy or messy.
  5. Starting from one edge, roll the tortilla up as tightly as possible, tucking the ingredients in as you go to form a firm log-shaped roll-up.
  6. Use a sharp knife to slice the roll-up into 4–6 bite-sized pinwheels, or leave it whole as a wrap. Repeat with the remaining tortillas and ingredients.
  7. Serve immediately or pack the turkey & cheese roll-ups into a lunch box or airtight container. Keep refrigerated until ready to enjoy.

Notes

For best results, use soft, fresh tortillas so they roll easily without cracking. Customize the roll-ups with your favorite spreads and veggies, and keep wet ingredients to a minimum if packing ahead for lunch.
