Ingredients
  

Steak
  • 1.5 lb sirloin steak cut into 1-inch cubes
  • 1 tbsp olive oil
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper freshly ground
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika smoked or sweet
Garlic Butter Sauce
  • 4 tbsp unsalted butter
  • 4 garlic cloves minced
  • 1 tbsp fresh parsley chopped, plus more for garnish
  • 1/4 tsp red pepper flakes optional, for heat
  • 1 tsp lemon juice optional, for brightness

Method
 

  1. Pat the steak cubes dry with paper towels to remove excess moisture. This helps them brown and crisp instead of steaming in the pan.
  2. Add the steak cubes to a bowl and season with salt, black pepper, garlic powder, and paprika. Toss well until each piece is evenly coated with the seasoning.
  3. Heat a large cast iron skillet over medium-high heat. Add the olive oil and let it heat until it is hot and shimmering.
  4. Working in batches if needed, add the steak cubes in a single layer to the hot skillet. Do not overcrowd the pan. Sear for 2 to 3 minutes without moving them to develop a crispy, browned crust.
  5. Flip the steak bites and cook for another 2 to 3 minutes, or until browned on the other side and cooked to your preferred doneness. Remove the steak bites from the skillet and set aside on a plate.
  6. Reduce the heat to medium. In the same skillet, add the butter and let it melt. Stir in the minced garlic and cook for about 30 seconds, until fragrant but not browned.
  7. Return the cooked steak bites and any accumulated juices to the skillet. Toss them in the garlic butter sauce until each piece is well coated. Stir in the chopped parsley, red pepper flakes, and lemon juice if using.
  8. Remove from the heat and serve the Garlic Butter Steak Bites immediately, garnished with extra parsley. Enjoy them as an appetizer, over mashed potatoes, rice, or with your favorite vegetables.

Notes

For the best crispy edges, make sure the skillet is very hot before adding the steak and avoid overcrowding the pan. You can use sirloin, ribeye, or strip steak for this recipe. Adjust the red pepper flakes to your preferred spice level.
