Ingredients
  

Salad
  • 2 cups cherry tomatoes, halved
  • 1 large cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1 green bell pepper, sliced
  • 1/2 cup Kalamata olives, pitted
  • 1 cup feta cheese, crumbled
Dressing
  • 3 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 tbsp fresh lemon juice
  • 1 tsp dried oregano
  • 1/4 tsp salt or to taste
  • 1/4 tsp black pepper

Method
 

  1. Prepare the vegetables by halving the cherry tomatoes, dicing the cucumber, thinly slicing the red onion, and slicing the green bell pepper.
  2. Add the tomatoes, cucumber, red onion, green bell pepper, and Kalamata olives to a large mixing bowl.
  3. Sprinkle the crumbled feta cheese over the vegetables.
  4. In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, dried oregano, salt, and black pepper until well combined.
  5. Pour the dressing over the salad and gently toss everything together until the vegetables are evenly coated and the feta is distributed throughout.
  6. Serve immediately, or chill for 10–15 minutes to allow the flavors to meld before serving.

Notes

For extra flavor, add fresh herbs like parsley, dill, or mint, or serve with warm pita bread. You can also add grilled chicken, shrimp, or chickpeas to turn this Simple Greek Salad into a full meal. Best served fresh.
