Ingredients
  

Cauliflower Wings Base
  • 1 large cauliflower cut into florets
  • 1 cup flour or gluten-free flour
  • 1 cup water or non-dairy milk
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 0.5 cup panko breadcrumbs optional for extra crunch
Chipotle Sauce
  • 2 chipotle peppers in adobo finely chopped or blended
  • 2 tbsp maple syrup or honey
  • 1 tbsp lime juice
  • salt + black pepper to taste

Method
 

  1. Preheat oven to 425°F (220°C). Line a tray with parchment.
  2. Mix flour, water, garlic powder, paprika, salt, and pepper to form batter.
  3. Coat cauliflower florets in batter, then in panko if using.
  4. Bake for 20 minutes, flip halfway.
  5. Mix chipotle, adobo sauce, maple syrup, and lime into glaze.
  6. Brush glaze over wings and bake another 10–12 minutes until crisp.
  7. Serve hot with fresh lime and herbs. Enjoy!

Notes

Air fryer option: Cook at 390°F (200°C) for 12–15 minutes. Freeze un-sauced wings for best reheating texture.
